NCCC’s Christmas tree

Earlier we were at NCCC mall to buy some ingredients for my small birthday celebration. It’s been a while since I was able to go back, good thing is, its almost Christmas and the mall has been decorated as such to attract shoppers and entice them to do early christmas shopping. While malling I took a picture of this big and very pretty Christmas Tree . I love looking at christmas trees especially the big ones, I just marvel at how they look.
Well, I took the liberty of taking pictures while my son was looking at some toys being displayed beside the tree, tough luck, I was able to let him pose beside the tree as well. It is 25 days to go before Christmas so, let me be the first one to greet you guys anyhow “Merry Christmas and A Happy New Year”.

Red Ribbon


After work I went straight to SM to check out possibilities of a pair of high heeled shoes and a purse to match my dress at the company Christmas Party. After doing so, I went ahead and grab a bite at Red Ribbon, it would be my first time here in Davao to eat there since SM is far from where I live and before, during my malling at SM, my husband isn’t into eating at Red Ribbon. I ordered a value meal which consists of a Chicken Empanada and Pansit Palabok with drinks at 67 pesos. I ordered an extra Empanada as well for 19 pesos. I realized they had great emapanadas there the fact that i don’t like those much, and as usual the Palabok was superb. Well it was another satisfying snack. So you must be wondering if I was able to buy the shoes and purse….we’ll nope, I’m still thinking about it.

Afternoon Delight Part2

Earlier, we had Part2 of our afternoon snack minus John this time because it’s his day off, Jan, Lovelie and I went to Charlies to eat the ever famous Pan De Sal, with Pansit Bihon Guisado this time, since our favorite Pansit Canton was not available. As usual we talked about almost anything and some about work. Again, it’s another satisfying snack with friends, a way to unwind after a long stressful day at work.

For those that love Pansit but does not know how to cook it, here’s a recipe of Pansit Bihon Guisado that my sis in law ann shared to me before when I was still learning how to cook.
note: the Pansit Bihon in the picture is not the recipe as stated below.

PANCIT BIHON GUISADO (chinese style)

Ingredients:

  • 50 grams Sotanghon
  • 8 cloves well-crushed garlic
  • 1 very large/ 70-80 grams minced red onion
  • 30 grams well-minced kinchay
  • 40-60 grams quartered & sliced very thinly bell pepper

  • 1 pc/ 40-50 grams quartered & sliced thinly chorizo de bilbao

  • ½ tsp ground black pepper
  • 4-5 pcs quartered squid balls (optional)
  • ½ cup soy sauce

  • 1/3 heapful cup LEE KUM KEE oyster sauce

  • 8-9 cups hot water/ unsalted stock

  • 1 sm/ 100-125 grams julienne carrot

  • 10-12 pcs/ 100 grams sliced diagonally green beans

  • 150 grams shredded cabbage

  • 150 grams shredded chinese pechay
  • ½ kg rice noodle (bihon)

marinated meat:

  • ¼ kg strips chicken gizzard
  • ¼ tsp rock salt
  • ¼ kg chunks chicken liver
  • ¼ tsp rock salt
  • ¼ kg shrimps
  • ½ tsp rock salt
  • ½ cup water
  • ½ kg thinly diced pork belly/ pork’s ear or face
  • ½ tsp rock salt
  • 1-½ tbsp cooking oil/ oil from pork fat
  • 1/3 cup water


Procedure:

Place sotanghon in a bowl. Pour water (same level). Set aside.
In a small bowl, combine 1st-batch of ingredients for marinated meat. Mix well. Set aside.

Do the same for the 2nd-batch.
In a small wok, place the 3rd-batch of ingredients for marinated meat. Place over med-hi fire. Do not cover. As soon as the shrimps turn evenly orange-pink in color, remove from pan. Drain well. Remove shells and head. Set aside.

In a very large wok or talyasi, place the last ingredients for marinated meat. Place over very hi-fire. Saute’ until some sides of pork has turn rich gold brown in color. Remove from pan. Set aside.

In the same pan, add 3-4 tbsps of oil. Carefully saute’ garlic until rich golden brown. Follow onion, kinchay, bell pepper, chorizo de bilbao and pepper. Saute’ for 2 minutes.

Add marinated chicken gizzard. Saute’ until evenly cooked or about 2-3 minutes. Put marinated chicken liver and lightly brown pork belly. Saute’ until liver has evenly change in color.

Pour soy sauce and oyster sauce. Add hot water. Bring to boil.

Drain sotanghon well. Place in boiling mixture. Bring to boil again.

Put all the vegetables and rice noodle. Keep mixing until all of its liquid evaporates.

It is best served with bread and ice-cold coke.

Davao’s Christmas Tree

Earlier, after malling and doing errands with my Team Lead at work, Lovelie; we went different ways going home, while waiting for a cab I decided to step a bit closer at the city’s biggest Christmas Tree and take a quick photo if it. It is situated just right outside the Victoria Plaza Mall and has always been there for the past few Christmas as far as I can remember. The lighting of the Christmas Tree was featured in the local news here a couple of days ago and too bad I wasn’t there to witness the event. While watching in awe, I could feel the Christmas spirit in the air. Christmas is indeed just around the corner. This is actually a quick shot that I took because there were lots of people that time in the area and I can’t afford to miss a cab bacause I really wanted to go home already, but anyway, I took just one photo and here it is.

Havaianas

Most of my officemates has this brand of slippers worn during dress down months, the ever fabulous Havaianas. These popular thongs have been made popular by Hollywood Stars. These fashionable flip flops is actually a Brasilian Sandal and has been exported internationally, it is very popular in the United States and even here in the Philippines. I first heard about these slippers late last year, it is by far the most coveted slippers I have ever known. They come in different themes and designs like kitten heels and those chunky ones. My favorites so far are the Cartunistas , Flowers or Butterflies and the Slim ones, for my son I like the Kids Monsters design with a dragon on it.
The flip flops are a bit pricey, who would’ve thought the cost of a simple pair of slippers would be a bit steep, but for those fashionistas of course, they don’t mind. Me, I’m still thinking if I’d really like to get one for myself. Here in Davao City you can find Havaianas at Villa Margarita (they currently offer 15% off on selected items), Chimes and at Gaisano Mall.

Kalimudan Festival

Yesterday after work my officemate Jan and I dropped by the Magsaysay Park here in Davao before going to the couturier just to take a glimpse of the Kalimudan Festival which will actually end today.The festivals theme is “Kalimudan: Panaghi-usa sa Mindanao (Mindanao Indigenous Peoples’ Gathering)”, It is a 2 week festival which had featured the Mindanao’s indigenous tribes’ vernacular architecture, cultural performances and exhibits, public forum, skill-share and creativity workshops, trade fair, craft sales and auction.
We were amazed of the wood designs as we go over the area, and we also saw different costumes for different tribes and their artwork in terms of Malongs and all other handicrafts and gift souvenirs. We also saw some foreigners being shown a demo on how to use their musical instruments. There had been some kind of a public forum as well at that time when we arrived featuring the T’boli folklore.

Last week my househelps on their day off actually was there to witness some activities on its second day, like food tasting, folklore dances, basket making etc., the festival started November 17 last week and will end today November 25, 2007.

Old Fashioned Chocolate Layer Cake


I would just like to share this chocolate cake recipe that I love, to all those mommies and everybody else that loves to bake.

Old Fashioned Chocolate Layer Cake

You will need the ff:
3/4 cup Magnolia Salted Butter
1 3/4 cups Sugar
3 pcs Eggs
1 1/2 tsp vanilla
2 1/4 cups cake flour
3/4 cups Sunny Farm Cocoa Powder or any cocoa powder of your choice
1 1/2 tsp Baking Soda
!/2 tsp salt
1 1/2 cups milk

for its Chocolate Buttercream:
3/4 cup butter
4 cups confectioners sugar
3/4 cups cocoa powder
1/3 cups milk
1 1/2 tsp vanilla

Procedure:

1. Preheat oven at 350 degrees farenheit. Grease three 9 inch round pans. Line the bottom with wax paper or baking paper. Set aside.
2. In a mixer bowl, beat butter and sugar until fluffy. Beat in the eggs and vanilla and mix until smooth.
3. Combine the dry ingredients then add alternately with milk. Beat until smooth.
4. Pour batter evenly in to the 3 pans. Bake at 20-25 minutes or until a toothpick inserted at the center comes out clean.
5. Cool on wire racks for 10minutes before unmolding. Cool completely.
6. In another bowl, beat butter with confectioners sugar, cocoa powder, milk and vanilla until smooth and fluffy.
7. Layer the cakes with the chocolate buttercream in between. Frost top and the sides with the remaining buttercream. Chill before serving.

Something Chinese

Asado Chicken Wanton Noodle Soup

Earlier after work we went to SM to buy a new pair of school shoes for my son. The rain was pouring hard outside that after buying, we dropped by our favorite Chinese restaurant Mandarin Tea Garden to eat first, since it’s been a while since we ate there.

When we sat down, my son ordered right away the Radish Cake in the menu. Although he doesn’t know what its name is, it’s what he always like to order everytime we eat there.

Aside from that we ordered Special Siopao (also called baozi in China or simply Pau (bun) in Hong Kong); or simply known as steamed buns in English), Sharksfin Dumpling, my ever favorite Buko Salad (which unfortunately I wasn’t able to take a picture with) and an Asado Chicken Wanton Noodle Soup. My sons yaya ordered Plain Wanton Noodle Soup as well.
Special Siopao

We love to eat at Mandarin Tea Garden because considering the fact that it’s a chinese restaurant, the food is cheap as well. We had a happy time eating while waiting for the rain to stop.

Total expense for the meal….380 pesos, it was such a satisfying merienda.
