Moist Brownie Dessert
This brownie recipe I got from a magazine. The original recipe was so-so, thats the reason why I tried to revise it a bit. I have always loved pastries and cakes thats why I like baking more, than cooking something. I have no background in baking and I just simply followed the recipe instructions, thats why I’m pretty sure you guys out there can try to bake this as well. I was able to perfect my own rendition after several tries.
I am proud to say that my kid likes my brownies very much, and my husband (whose not an avid fan of pastries) was able to appreciate it himself; even the rest of the family and to some officemates that was lucky enough to taste it. I even tried to add peppermint flavor once and its not bad too.
This is my own version of:
Moist Brownie Desert
1 cup butter
1 cup cocoa powder (sifted)
2 1/2 cup white sugar
5 eggs
1 cup cashew nuts (coarsely chopped)
3/4 cup cake flour
3/4 cup 3rd class flour
1/2 tsp salt
2 tsp vanilla
some light syrup
Procedure:
- Preheat oven to 350°F.
- Line a 9 x 13 x 2” rectangular pan with baking paper. Set aside.
- Sift the 3rd class flour, cake flour and salt. Set aside.
- In a small saucepan, melt butter over low fire. Remove from fire and stir in the cocoa. Set aside.
- In the bowl of the mixer on fast speed, beat eggs and sugar until light and fluffy; switch to medium speed for about 5 minutes.
- At low speed, stir in cocoa mixture, cashew nuts, vanilla extract and the sifted dry ingredients.
- Pour mixture into the prepared pan. Bake for 45 minutes or until done.
- Cool on wire racks. Cut into bars. Brush top with light syrup.

C&C Fruitcake
Again, Christmas is here! Sumptuous food and pastries are just around for the taking. One of our bonding experience as a couple is creating our own fruitcake, from an original recipe that we’ve got from a magazine. We have come to realize that we have to create a fruitcake recipe that will cater the taste buds of Davaoenos, so we started experimenting and testing different types of new combinations, recipes and after several months of trials & errors, baking and tasting…hmmmm…VIOLA! we’ve created C&C Fruitcake.
It has the taste of sweetness, the mixture of tanginess and flavors of spirits from the rum and brandy, its cashew taste that’s overflowing, the right amount of raisins which gives the fruity taste, glazed fruits which gives the excitement of taste that’s really Christmas is in town. Makes it the perfect gift for the season.
One of our friends really got hooked with it, he even have to take a whole cake just for himself and consume it just for the Holiday season.
We have yearly re-orders from our patrons from the past several years, from personal give-aways for family or friends, small to medium business owners as Christmas tokens for their customers and give-aways to employees.

My 35th year on Earth
For several decades, I never celebrated my birthdays, but on my 35th year on earth, I decided to celebrate it in my most intimate and wonderful time with my family. My family and I decide to go to Paradise Resort at Samal Island. We swim all day, playing aqua sports, eating food – really good food!!! Shrimps and other sea creatures that u can imagine eating…OOH. My kid and I really enjoyed playing together, playing with sand and even the simple splish-splashing with seawater…Hey! He also learned to go underwater just for a few second, well, thats a big step since he was afraid of the water few months back.
For my other son, GJ, he was not with us since he’s in manila. But I am hoping that in my next birthday, he’ll be there. We miss him!
We were there for a couple of days and went back home next early evening, it was worth it, very intimate and very simple way of celebrating my birthday…the way I want it to be!
